Twice a month, the team gathers to taste the wines from different parcels. We have found a surprising and pleasing balance between alcohol, acidity and tannin: the syrahs are complex, the grenache shows a great acidity level and the vivacity of the carignan will provide freshness to our blends. Each parcel’s distinct characteristics confirm the richness and variety of the Mille terroir. The vinification process, in both oak and steel vats, enhances their innate flavours. Our work sessions are invaluable to refine the style of wines and bring forth their essential natures.
